New Italian Restaurant Set to Open in Poughkeepsie This September

In April 2026 the team at Spettro in Poughkeepsie made an announcement introducing the Hudson Valley to a new restaurant called Giulia.

At the time we learned through a press release from owners Giovanni Iliardi and Michael Purcell that Giulia would operate as "a classically-inspired Italian sandwich and New York style pizza shop" by day.

By night Giulia would become a:

 "warm and nostalgic destination where classic red sauce favorites take center stage, complemented by cocktails and shared plates that invite connection and conversation."

Now we get to see what it's all about. For the last few weeks, Giulia has been hosting soft openings for friends and family. Giulia on Raymond Avenue in Poughkeepsie will officially open their doors on September 8th, 2026.

Will Spettro in Poughkeepsie Change Now That Giulia Is Open?

Many were wondering if there would be any changes to the popular Spettro location in Poughkeepsie following the opening of their sister restaurant Giulia.

It looks like there are some changes on the way, but don't worry Spettro is staying open!

In a social media post Spettro explained "With the unveiling of giuliapkny on Raymond Avenue this month, we’re making room for something new."

The statement continues as Spettro writes:

 As we welcome Giulia into the fold, we’re giving lunch a new home and allowing Spettro’s dinner and brunch menus to embrace a new chapter of their own. Beginning next week, Spettro will be open exclusively for dinner and weekend brunch.

Spettro owners Giovanni, Michael say that this change will allow them to "make room for expanded menus and refined plates at Spettro designed to take the experience a leap forward."

Spettro Dinner Only Service Begins After Giulia Opens in September

If you've never tried the food at Spettro, you're missing out. Everything from their entrees to their pizza and salads are incredible. My personal favorites are the Dark Star Pizza and the King of Kings pizza.

There's just something about that sesame crust...

Spettro will flip to dinner only services on Tuesday September 8th, 2026, when Giulia officially opens to the public.
